Coming to you via Broome County's Salimada Company, the State Fair Spiedie Marinade has been a southern tier staple since1976. As someone who lives a little too far to make it to Spiedie Fest every year, I've started picking up a few extra bottles for friends and family when I see them in stores. I have some extra and hoping you and yours can enjoy our family's favorite chicken marinade.How I cook my spiedie sandwiches:
buy super fresh chicken so it can safely marinate longer
cut chicken into about 1 inch cubes
submerge chicken in the marinade (I usually do one bottle per 2-3 lbs of chicken in a large container)
Refrigerate for 2-3 days, I try to shake the container a couple times each day
When ready to cook, place on skewers - I put a few small pieces on the end that cook fastest and can be pulled off for snacking while grilling
I guess the term is charbroil but you are really just cooking them until done. Typically 5-7 minutes depending on how hot and how many skewers I have on the grill
When it comes to the sandwich itself, the essential is just meat and bread, typically italian bread. I do one slice folded in half lice a taco, grandma was always two slices, mom toasts her bread, wife puts mayo on hers, and grandpa held some marinade back to sprinkle on the finished product
